Orzo with Sausage and Halloumi Cheese

200g sausage thickly sliced
10 cherry tomatoes sliced in half
1tsp tomato paste
120ml extra virgin olive oil (Saint George)
250g halloumi cheese grated
750ml vegetable stock
Zest of a half lemon
Salt and freshly ground black pepper
In a deep pot fry the sliced sausages onto medium heat with the extra virgin olive oil, add garlic and cook for a minute.
Add tomato paste and cook until fragrant and add the tomatoes for another 5 minutes.
Add orzo and mix well for 1-2 minutes.
Add vegetable stock and cook for another 10 minutes onto medium heat, add the grated halloumi and lemon zest.
Finish with freshly ground black pepper and serve hot.
